Pizza Casserole

Ingredients
1 bag of egg noodles
1 jar of tomato sauce
3 cups Mozzarella cheese, shredded
1 1/2 pounds ground beef
1 package of pepperoni

Instructions
1.Brown the meat and drain the grease.
2.Boil Noodles until soft. Drain the water.
3.Preheat oven to 350 degrees
4.In a 9×13 casserole dish, first, spread a thin layer of tomato sauce on the bottom.
5.Second layer half of the noodles over the sauce. Then half of the meat and the rest of the noodles.
6.Next layer half of the cheese, the remaining meat, the rest of the sauce, and then the remaing cheese.
7.Last top with pepperoni
8.Cover with foil and bake for 30 minutes. After 30 minutes remove foil and bake for another 15 minutes.
9.Take it out of oven and let if sit for 10 to 15 minutes.

Success, always pleased when the whole family enjoys the same meal!!!!

I miss you all and yes, my blogging has been on the back burner friends. For those of you who know me and miss me and have been sending me messages, thank you so much. It’s very nice to know that I have been missed. Life has been more than a jumble this last summer, and I just can’t get myself to write new posts as of yet or even peruse other blogs.  Please don’t take my lack of commenting on your blogs personally.

Someday soon, hopefully,  Geni will get her groove back (yes, sometimes I refer to myself in the third person, but it’s just one of the oddities that makes me, me). But until then…I believe in sending you re-posts and reminders of deliciousness gone by. Leftover Roast Beef Sandwiches

This is basic but everyone in the house enjoys!

Slice open Kaiser roll – lay open on baking sheet
Swiss cheese on one side and left over cooked roast beef on other – broil until cheese is melted and roast is warm

In the meantime on stove top sauté mushrooms in a fry pan
and caramelize onions in another

add toppings to sandwiches
yum!

During the summer, burgers on the BBQ are a hit. Everyone dresses up their burger to their liking.

Dad Burger
A burger topped with tomato, melted mozzarella, lettuce and onion
Mom Burger
A burger topped with melted swiss cheese, sauté mushrooms and mustard
Sis Burger
A burger topped with tomatoes, mayo and relish
Bro Burger
A burger topped with melted cheese…”anything else?”…”no just cheese”

This was a hit! When I asked lt;” should I make it again?” YES! was the loud quick response.

Store bought thin crust pizza shell- I am always about making things easier!
Cook 500kg or 1 pound lean ground beef add taco seasoning to your liking
1 can of tomato paste
Shredded Tex-mex cheese
Dice 2 tomatoes

Spread tomato paste on pizza crust.
Now add your cheese
Followed by cooked taco meat
Top with diced tomato

Bake according to crust instructions

Almond crusted chicken fingers with honey mustard dipping sauce

This recipe wins for the longest title!  I contemplated adding in the fact that these chicken fingers are oven baked but adding two more words would be a little much, right?  I digress.  Back to the food.  I’ve always wanted to try to make my own chicken fingers at home but for some reason I never did, until now that is.  What I love most about doing this blog is that it forces me to try new things and experiment more in my humble kitchen.  These chicken fingers are crusted with almonds and panko bread crumbs and are crunchy and satisfying.  I soaked them overnight in buttermilk to tenderize them and served them with a quick and spicy honey mustard dipping sauce.  This meal is a breeze to put together and can be enjoyed by kids and adults.

Yields: 4 servings
