“TO SHOOT HARD LABOUR”

At the north-eastern point of Antigua there is a remote wild area known as Indian Town Point. The area was legally constituted as a National Park in the 1950’s.

Within the park there is a remarkable example of sea-water erosion. Geological, Devil’s Bridge is a natural arch carved by the sea from soft and hard limestone ledges of the Antigua formation, a geological division of the flat north-eastern part of Antigua. A bridge was created when a soft part of the limestone eroded away by action of Atlantic breakers over countless centuries.

Sammy Smith, a 104 year old Antiguan patriot had the answer. Here is a quote from his memoirs “To shoot Hard Labour”.

“On the east coast of the island is the famous Devil’s Bridge. Devil’s Bridge was call so because a lot of slaves from the neighboring estates use to go there and throw themselves overboard. That was an area of mass suicide, so people use to say the Devil have to be there. The waters around Devil’s Bridge is always rough and anyone fall over the bridge never come out alive”.

Cheeseburger Soup

Cheeseburger Soup 

Serves 6

Ingredients

6 cups chicken broth
1/2 tsp sea salt
head cauliflower, cut into florets
1/4 tsp paprika
1 tbsp butter
1/8 tsp ground black pepper
1 small onion, chopped
450 grams lean ground beef
1/2 c shredded sharp Cheddar cheese

Instructions

Combine 6 cups of broth and cauliflower into large saucepan; cover and bring to boil. Reduce heat and cook 15-20 min, or until cauliflower is tender.

Meanwhile, add butter to medium pan over medium-high heat. Cook the onion, stirring until golden.

Crumble in ground beef and cook thoroughly.

Stir in salt, paprika and pepper. Remove from heat and set aside.

Transfer the cauliflower and broth to a food processor or blender and puree until smooth.
Return to the saucepan.

Whisk in cheese just until it melts. Remove from heat and stir in the reserved meat mixture.

Serve and garnish with cheese and pickles

6 Ingredients

1 Crust (store bought)
500g or 1lb lean ground beef
Taco seasoning
1 can tomato paste
Shredded Tex Mex cheese
2 Diced tomatoes

Instructions

Store bought thin crust pizza shell- I am always about making things easier!
Cook 500g or 1 pound lean ground beef add taco seasoning to your liking

Dice 2 tomatoes

Spread tomato paste on pizza crust.
Now add your cheese
Followed by cooked taco meat
Top with diced tomato

Bake according to crust instructions
