Baseball Cake

Ingredients
3 cups sifted flour
3 1/2 teaspoons baking powder
1/2 teaspoon
1 pound unsalted butter, softened
2 cups granulated sugar
2 tablespoons pure vanilla extract
7 egg whites
1 cup plus 2 tablespoons milk
4 cups confectioners sugar
Red food coloring

Directions
1. Preheat the oven to 350 degrees . Grease and flour two 9-inch round cake pans. Line the pans with parchment and grease the parchment. In a medium bowl, combine the flour, baking powder and 1/2 teaspoon salt.
2. Using an electric mixer, beat 1/2 a pound butter and the granulated sugar at medium speed until fluffy, about 5 minutes. Stir in 1 tablespoon plus 1 teaspoon vanilla and a pinch salt. Gradually add the egg whites, beating on low speed and scraping the side of the bowl. Beat at high speed for 1 minute until smooth. Mixing at low speed, add the flour mixture in 3 parts, alternating with 1 cup milk. Beat at medium speed until smooth, about 30 seconds.
3. Transfer the batter into the prepared pans. Bake until a toothpick inserted into the center of the cake comes out clean, about 40 minutes. Let cool for 10 minutes, then invert the layers onto a rack, discard the parchment and let cool completely.
4. Meanwhile, using an electric mixer, combine the remaining 1/2 a pound of butter and the confectioners sugar at low speed. Gradually add the remaining 2 tablespoons milk and 2 teaspoons vanilla and beat at high speed until fluffy, about 5 minutes.
5. Transfer 1/4 cup of the frosting to a small bowl. Add enough food coloring to make a vivid red. Place 1 cake layer on a platter. Spoon a large dollop of plain frosting in the center of the layer and spread to within 1/4 inch of the edge. Place the second layer on top of the first and frost the top and side with the remaining plain frosting. Using a resealable plastic bag with one corner snipped off, pipe the red frosting onto the cake to look like baseball stitching.

Dad’s Blueberry Pie with Lattice Crust

Fresh Blueberry Pie with Lattice Crust

Fresh Blueberry Pie
6 cups fresh blueberries
3/4 cup sugar
1/2 cup flour
1 Tbsp. fresh lemon juice
1 Tbsp. butter

Best pie Crust ever

Ingredients:
2 cups all-purpose flour
1 teaspoon salt
1 cup shortening
1/2 cup water

Directions:

1. In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight.
2. Roll out dough on a floured counter. Don’t over work it.

Place bottom crust into 9-inch pie plate letting the crust hang over the edges. Mix together the blueberries, sugar and flour. Pour into the crust. Sprinkle the blueberries with lemon juice and dot with butter. Top with lattice crust. Seal and crimp edges of pie.

Bake in a preheated 425 degree oven for 35-45 minutes until the crust is golden brown and the juices are bubbly.

Johnnycakes are thought to be the original pancakes. Last year, I made Johnnycakes for my son to bring on a field trip to a historic one-room schoolhouse, wrapped in his old-fashioned lunch basket with a potato! (his request… I am sure something else was in there but it was not as memorable!) They are delicious cornmeal pancakes served with butter and honey. I love cornmeal pancakes served with syrup as well.

When I read about this bread version of Johnnycakes from Bon Appetit on First Look then Cook, I wanted to make it right away. Her description was wonderful, and we ate it as suggested- warm with butter. My kids and I loved it! A great change of pace for breakfast. It would also be a delicious snack with a cup of tea or a glass of milk.

Cake Pops

I came across this and thought I would share this creative yummy idea.

I baked double chocolate cake for my kid’s birthday, both my kids did really enjoy the cake, but they could not able to finish 🙂 Had more left over, that they can not finish in a day or two.

To utilize the left over, I thought of making them pops. Here is how I did..

  • Bake Cake (I used the left over cake).
  • Crumble the cake with hands after cooling down, mix with frosting (I mixed 1 and 1/2 teaspoon of frosting for 12 pops) and make like balls. Let it set in room temperate for 10 minutes.
  • Melt few candies (microwave or stove top), dip an inch of lolly pop sticks, and insert into the pops.
  • Keep the pops in fridge for 30 minutes.
  • Melt colored candies, dip the pops, sprinkle nuts/candy sprinkles when the pop is wet.

Happy Birthday to me! Well, yesterday actually, but who’s counting 😉

Continuing the brilliant tradition of taking cakes into the office for my birthday, these bad boys are my offering for 2014. Having just eaten one with compliments from colleagues ringing in my ears, I cannot help but rave about them. They are so good. And, made with real bananas, good for you as well. Wins all round.

They also make use of the final product from my Sugar and Crumbs trial pack. As much as I enjoyed using the Chocolate Cherry Cocoa Powder and Coffee Icing Sugar, this Salted Caramel Icing Sugar was always going to be my favourite, and it certainly didn’t disappoint.

Easy Turtle Bar

Mix together

1 white cake mix
2 eggs beaten
1/2 cup of melted butter

Put in 9 x 13 sprayed baking pan
Chop up 7 turtles place on top of batter
350 degrees for 15 minutes

Chop up 4 more turtles and 1/2 cup of pecans and sprinkle on top
Put back in oven for 5 more minutes

Let cool and drizzle with caramel sauce
