And so, the pumpkin/pumpkin spice craze continues… this time in the form of delicious and chewy caramels.

Last weekend I had a long-standing kitchen date/caramel-making lesson with my friend, Carissa. I’m always happy to forgo my diet in the name of helping others! After we finished our first batch of basic salted caramels, which I was impressed only took us one try (I suppose at this point I’m a little more seasoned in the dangerous art of caramel), we decided to make a second batch with a seasonal spin. So Carissa whipped up some homemade pumpkin spice (I’d recently run out-big surprise), and we added it to our base recipe. What I love about caramel-making is once you master the basics, its so easy to customize the flavor, especially since the ingredient list is minimal and the process is rather quick, you can easily whip up multiple batches in one…

Pizza Casserole

Ingredients
1 bag of egg noodles
1 jar of tomato sauce
3 cups Mozzarella cheese, shredded
1 1/2 pounds ground beef
1 package of pepperoni

Instructions
1.Brown the meat and drain the grease.
2.Boil Noodles until soft. Drain the water.
3.Preheat oven to 350 degrees
4.In a 9×13 casserole dish, first, spread a thin layer of tomato sauce on the bottom.
5.Second layer half of the noodles over the sauce. Then half of the meat and the rest of the noodles.
6.Next layer half of the cheese, the remaining meat, the rest of the sauce, and then the remaing cheese.
7.Last top with pepperoni
8.Cover with foil and bake for 30 minutes. After 30 minutes remove foil and bake for another 15 minutes.
9.Take it out of oven and let if sit for 10 to 15 minutes.

Success, always pleased when the whole family enjoys the same meal!!!!

The combination of apples and caramel is something that I’ve always loved. Whenever Halloween comes along, I always have the intention of making some caramel apples, but, sadly, I never get around to making them. Well, this year, there’s no excuses! I’ve found a couple recipes (thank you Pinterest) that look really yummy. Halloween Trifle

Back to basics…..This was the coolest dessert when I was a child. Its so easy, why not?

This makes 4 Individual servings

Make 1 box of orange jello – bottom level – 1/2 cup for one serving- let jello set
Make 1 box of chocolate pudding – pour 1/2 cup on top of set orange jello – let pudding set
Top with Whip Cream and of course CANDY CORN!!!!

1 Chocolate Cake mix
follow cake mix instruction to create batter
add
1 can of cherry pie filling

add batter to muffin tins bake according to instructions – makes 24 cupcakes

let cool

make a circular deep cut in cupcake and remove cake piece – fill with favorite cream filling
cut leftover cake piece in half to create “wings”
sprinkle with powdered icing sugar

Piñata Cake

Pinata Cake

1 box of white cake mix – prepare batter as per instructions
Pour 3/4 of the batter in a 8″ spring pan and remaining batter in 8″ round baking tin
Bake according to instructions – let cool
Hollow out cake in spring pan – leave inch border around and hollow out 1 inch deep
Fill with 2 cups of your favorite candy
Place round cake on top and invert cake so the hollowed and candy filled cake is the top
Frost and decorate
Enjoy!!!
