Roasted Stuffed Pork Tenderloin- Our Date Night Dinner


Roasted Stuffed Pork Tenderloin

1 pork tenderloin (approx. 1 pound)

6- 8 bacon slices

1 tbsp. butter

1 small onion, finely chopped

6 oz bread crumbs

1/4 cup of cranberries

1/2 cup crumbled goat cheese

1 egg, beaten

Preheat oven 350 degrees F.

Slice tenderloin in half lengthwise, then slice each half again lengthwise (do not cut through meat)
Flatten down tenderloin into even thickness

In a sauté pan melt butter on medium heat add onions, sauté until tender, remove from heat

In a large bowl combine breadcrumbs, cranberries, goat cheese and beaten egg. Add onions to mixture

Place stuffing on top of flatten tenderloin

Re-form tenderloin and wrap with bacon slices

Roast for 1 hour

Serve with favourite vegetable and salad
