Chicken Parmesan with Stuffed Pasta Shells Casserole

First Bake the Chicken,

Ingredients

3/4 cup plain dry bread crumbs
1/2 tsp. Italian seasoning
1/4 tsp. garlic powder
4 boneless, skinless chicken breast halves
1 egg, beaten

Directions
Preheat oven to 400°. Combine bread crumbs, Italian seasoning and garlic powder in shallow dish. Dip chicken in egg, then crumb mixture; turn to coat.
Arrange chicken in 13 x 9-inch baking dish. Bake 20 minutes.

In the meantime….

Cook the 20 of Jumbo Pasta Shells according to instructions -let cool

Pour enough of your favorite spaghetti sauce  to lightly cover the bottom of a 13 x 9 shallow baking dish.

In a mixing bowl combine

1 (32oz) container of ricotta cheese
2 beaten eggs
1 cup of shredded mozzarella
1/2 cup of grated parmesan

Stuff Pasta Shell with mixture 1TB per shell and place in baking dish

Cut  the Baked Chicken into bite  size pieces and place on top of stuffed shells

Pour the remainder pasta sauce over shells sprinkle mozzarella over shells

Cook in preheated 350 degree oven for 40 minutes

Ground Turkey Enchilada Bake

Ingredients

2 cups cooked ground turkey
2 cups salsa
1 can (19 fl oz/540 mL) black beans, rinsed
1 cup frozen corn
2 Tbsp. chili powder
2 diced tomatoes
4 large flour tortillas
3/4 cup sour cream
1-1/2 cups shredded Cheese

Instructions

Heat oven to 400°F.

Combine first 6 ingredients.

Cover bottom of 13×9-inch baking dish sprayed with cooking spray with 2 tortillas; top with layers of half each of the turkey mixture, sour cream and cheese. Repeat layers; cover.

Bake 40 min. or until casserole is heated through and cheese is melted, uncovering after 30 min.

Creamy Turkey Noodle Bake

Ingredients
 

450 g extra-lean ground turkey

1 small onion, chopped

1 tsp. garlic salt

3 cups egg noodles, uncooked

2 cups broccoli

1 can (10 fl oz/284 mL) condensed cream of celery soup

1 cups milk

1-1/2 cups  Shredded Cheese Harvarti

Instructions

Heat oven to 375ºF.

Brown meat with onions in skillet; drain. Stir in garlic salt. Spoon over noodles in 13×9-inch baking dish; top with brocolli.

Whisk soup and milk until well blended; pour over. Top with cheese; cover.

Bake 35 min. or until heated through, uncovering after 25 min.
